Live female mud crabs, 500 g to 700 g each. Smaller claws than the males, but richer body meat and roe, which suits a curry where the sauce matters as much as the meat.
Keeping it: Keep live shellfish in the fridge under a damp cloth — never sealed in plastic or sitting in fresh water — and cook them the same day.
