Scallop meat with the roe removed, in 100 g packs — just the sweet white muscle, and the milder of the two options. Give them a very hot pan and about a minute a side.
Keeping it: Keep frozen at −18 °C. Thaw overnight in the fridge, use within 24 hours, and don't refreeze it.
