Product details
Bacalao — cod preserved in salt, the way it has been kept for centuries. It must be soaked before use: 24 to 48 hours in the fridge, changing the water several times, after which it rehydrates into a firm, deeply flavoured fish for brandade, croquettes or a stew.
Keeping it: Keep sealed at 0–4 °C and use by the date on the pack; once it's open, within three days.
